  • 2 heads of greens ( spinach, swiss chard) washed and chopped
  • 4 medium size potatoes, washed and cut into large pieces
  • 1 cup water 
  • 1 cup Zoefull's Wild Olive oil
  • 1 lemon juice, plus extra slices for serving
  • 2 cloves garlic, chopped
  • 1/2 tsp salt and pepper


  • Clean and chop the greens, and wash and cut the potatoes.
  • Peel and dice the garlic.
  • Add all ingredients into the Instant Pot and mix thoroughly.
  • Secure the Instant Pot lid and ensure the vent is set to sealing.
  • Use the manual setting to cook for 15 minutes.
  • Once the timer is finished, move the valve to the vent and release all the steam.
  • Allow the greens and potatoes to cool slightly before serving with lemon slices.
