Why Wild?
Most olive oil comes from neat rows of farmed, irrigated trees bred for yield. Ours doesn't.
In Laconia, wild olive trees grow the hard way — no irrigation, no fuss, rooted in rocky Greek hillsides and shaped by the sun. They produce less fruit, but that fruit is smaller, denser, and far richer in the polyphenols that make olive oil worth taking seriously.
We could grow more by farming it. We choose not to. Wild is the whole point.
